- 2 cups (480 ml) coconut water
- 2 cups (480 ml) coconut soda
- 2 ½ teaspoons agar agar powder
- ½ cup (100 g) granulated sugar
- ½ cup (50 g) fresh coconut slices, cut into thin strips
For the Creamy Coconut Layer:
- ¾ cup (180 ml) coconut milk
- 1 cup (240 ml) reserved coconut mixture from the first layer

Equipment Needed

Before we begin, prepare the following:
- 1 medium saucepan
- Measuring cups and spoons
- Mixing spoon
- Fine strainer
- 4 dessert cups or one medium container
- Refrigerator
Having everything ready will make the process much easier.

Step 1: Prepare the Coconut Mixture

1. Pour 2 cups of coconut water and 2 cups of coconut soda into a saucepan.
2. Sprinkle 2 ½ teaspoons of agar agar powder over the liquid. Let it sit for 5 minutes. This allows the agar to absorb moisture and helps create a smoother jelly texture later.
3. After 5 minutes, add ½ cup of sugar.
4. Place the saucepan over medium heat and stir continuously until the sugar dissolves completely.
5. Bring the mixture to a gentle boil. Continue stirring and cook for 4 to 5 minutes. The liquid should become completely clear with no visible agar particles.

Step 2: Reserve Liquid for the Second Layer

1. Carefully measure and remove 1 cup (240 ml) of the hot coconut mixture.
2. Set this portion aside. It will be used later to create the creamy coconut layer.
3. Add the ½ cup of sliced fresh coconut into the remaining mixture in the saucepan and stir gently.
4. The coconut pieces will add texture and a more authentic coconut flavor to the finished dessert.

Step 3: Create the First Layer

1. Pour the coconut mixture containing the coconut slices evenly into 4 dessert cups.
2. Each cup should be filled about halfway.
3. Place the cups in the refrigerator for 18 to 20 minutes.
4. The jelly should become partially set. When lightly touched, the surface should feel slightly firm but not completely solid.
5. This stage is important because it allows the second layer to stay separate and create a beautiful two-layer effect.

Step 4: Prepare the Creamy Coconut Layer

1. Pour the reserved 1 cup of coconut mixture into the saucepan.
2. Add ¾ cup of coconut milk.
3. Place the saucepan over low heat and stir continuously.
4. Heat the mixture until it begins to gently simmer. Continue cooking for 2 to 3 minutes while stirring to ensure the coconut milk blends smoothly with the jelly mixture.
5. Do not allow the liquid to cook for too long, as excessive heat can affect the final texture.

Step 5: Add the Second Layer

1. Remove the dessert cups from the refrigerator.
2. Using a spoon, slowly pour the coconut milk mixture onto the back of the spoon and let it gently flow onto the first layer.
3. This simple technique prevents the two layers from mixing together.
4. Divide the creamy mixture evenly among the cups.
5. The creamy layer should sit neatly on top of the clear coconut layer.

Step 6: Chill Until Fully Set

1. Return the cups to the refrigerator.
2. Allow the coconut jelly to chill for 2 to 3 hours.
3. During this time, both layers will become fully firm and develop their final texture.
4. Once set, the dessert should hold its shape while remaining soft and smooth when eaten.
